um the only major difference between them two (or all the potential spouses) besides appearance and their likse, is what they'll give you after you marry them. But personally i like Haley because her cutscenes are adorable. I haven't tried Emily yet but Haley is easy to woo.

You can check the Wiki for each character to see what they do after marriage and if you prefer their benefits, but for the most part they usually aren't too drastically different.

Personality wise, I prefer Emily. Even after Haley's "change" she still feels pretty fake to me.

Probably Haley. I love Emily but I prefer Haley's character development. I am a sucker for the ones with layers in their personality. And Haley's Cut scenes are just adorable.

After some debate between Sebastian and Shane (his room looked way too messy when I checked out the spouse rooms), I married Emily. I like her dialog and the little gifts she gives me. She's a sweetheart. I never much liked Haley so never even considered her.
