Go visit the eligible honeys and bring them presents.
Upgrade tools.
Clear land on your farm.
Build bee hives.
Re-organize the farm.
Build more bee hives.
Forage
Plant those winter seeds. You can get 30 for completing the winter forage bundle.
Refine ore into bars and make coal from your wood.
Grow a ton of wheat in the summer and fall, then make beer all winter.
Same with hops and pale ale.
Get a ton of stone and cheese your way to level 100 in the mines to get the stardrop fruit.
Visit the Stardrop Saloon every night and ply Pam with alcohol.
Visit Caroline and give her the attention Pierre is too busy to give her. Max out her hearts and use your imagination.
Same with Robin.
Same with Jodi.
Build more beehives.
Plat spring fruit trees.
Plant some nice groves of maple trees to harvest maple syrup for your bee hives.
Same with oak trees to get oak resin for your kegs for your beer and pale ale and wine.
Same with pine trees to get pine resin for your looms if you are growing bunnies or sheep.
Take the bus to see Sandy and give her gifts. She's not marriageable (more's the pity), but use your imagination.
Stockpile cauliflower, melons and pumpkins during the year so you make jelly and pickles all winter.
Make friends with Marnie so you can get into her bedroom and get Lewis's shorts. Whatever else you do in Marnie's bedroom is limited only by your imagination.
Build more bee hives. I like t have about 100 bee hives at the end of year 2 winter.

Have a good winter!

The only thing I really do is manage my barn and my coop...

The night festival thingy is interesting on the 15, 16 and 17th of the month. I usually will start making seeds for spring with my saved crops. Also go looking for the winter roots to make the winter seeds. I usually sell all the yams and the lower level flowers, but keep the gold star flowers for gifts. Winter is also a good time to make sure your tools are updated. I like to have everything at least up to iron.

Mining can help you earn money during winter, you can also fish. And then there's stuff for the CC as well.
When you unlock the greenhouse everything changes...
do foraging in winter to get winter seeds, those are the only seeds you can farm in winter that dont need a greenhouse, and they sell for a lot

I pretty much spend winter in the mines and trying to get better at fishing (you get the hang of it eventually)
It's also the perfect time to focus on building or upgrading stuff on your farm cause a lot of that just takes rocks/wood/etc.
You can also dedicate extra time to giving everyone their favorite gifts!
Once you build the greenhouse, you won't be so bored xD

Definitely a good time to stock up on wood and rocks so you can upgrade/ build. Also a good time to mine and fish. 2nd winter I got more animals (1st just had a small coop) so more to do there, and just got the greenhouse. Actually, just finished all the community center bundles, so lots of stuff unlocked as I go into my 2nd winter. Plenty to do!

Mining, leading to mining level up and tool upgrades. Fishing, leading to fishing level up and new fish may be found. Foraging, leading to foraging level up and finding new fruit & veg. Meeting new people, or build relation with other people. Exploring (Town & Desert), leading to finding new areas. Work on community center, leading to new areas, (Or if you cant be bothered, work on JoJa Center, using only cash)
