This pretty much. From my experience playing MP with a friend, that's how it behaves (and logically should). If i host and crash, everyone is rolled back to the beggining of the day.
If you lose any more progress than the day you're currently playing, it's almost definitely a bug.
Unless your internet having issues causes your hosted game to crash or go back to menu? But I doubt this is the case. All of the information about the farmhands and the stuff they have is saved on YOUR save file, after all. So as long as your game is still running, the basic information should still be up to date. But they would be teleported back to their cabins (and with full health/stamina) for sure, when they reconnected.
If you aren't gonna be bothering anyone else in your home, you may want to restart your router/modem before starting hosting your game for the day. I dunno what it is, but Stardew Valley seems like it likes to stress out my router/modem, but I have no issues if I do a quick unplug for 5-10 seconds before starting/joining a session for the day.
