But I have to do all the farming in the morning
I have honestly never had trouble getting to the shops before they close. There are times where I forget to go to them for a day or so. But that is different. Your farm isn't going to become agressive (or die) if you hold off tending it a few hours while you run to the store.
Having said that, you might check around the mod forums on the Stardew Valley site. Someone might have tweaked the store hours for various shops. (Including days off.) No promises that such a mod exists. But I would be hard pressed to believe otherwise.

P.P.S. I dunno, i can handle all farm stuff for 3-4 hours. 2 coops, 2 barns, few crops fields...
Get up at 6 a.m. and work for a few hours.
Then knock off for lunch and go into town to shop. You should have plenty of time to go to Robin, then Pierre then the blacksmith before 4 p.m. and even drop by Marnie's place.
Head back home, but you can stop off at the travelling caravan on the way because is stays open later.
Finish your farm chores. You have until after midnight.
Plan ahead to minimize trips. For example, plan what crops you'll plant all month then buy all your seeds for the month on day 1.
Plan how much wood and stone and ores you'll need for the month so you only have to go to blacksmith once.
In short, do everything you can to minimize the number of trips to town.
It's a strange method to get used to, but it's well worth it.

Why gimp the game just to pander to the five people who cannot budget their time properly so they can go to the store and still get their farmwork done..
They can go to Joja mart if they can't manage to break away from the farm to walk over to Pierre's. I believe it is open until 11 p.m.
As for the carpenter shop, the blacksmith and Marnie's animal farm -- How many of those really maintain late night hours?
