All you can do is either keep doing that or buy the ore from Clint
You can also go to the Quarry for some easy and fast iron to grab or turn 3 Copper-Bars into 1 Iron-Bar.
hm I don't have much copper either and quarry is cleared and takes ages to return. guess I'll have to do this
If you are doing that, you should get more than 20-30 per a day. i just got 50 copper, 120 iron and 20 gold ores in average lucky day after heading to mine at 10am. I do have +1 ore perk, but even if not, you should get more than 20-30

You see certain levels say Abundant resources on certain levels. These are the ones you want to farm in general. For iron ore it is 71-79 but your best bet is to elevator to 75 clear, stairs up, and then back down to 75 and clear. This should give you the most output for iron ore.
You are not getting any ore at every 5th floor. If you go down to 75th floor, you actually have to look for a ladder to go down to 76th floor for iron ore. Just go to 40th floor and go down to 41th floor.
Buy the iron ore from Clint, then smelt it into iron bars with your own furnaces.
Clint also has copious amounts of copper ore, coal and gold ore, and I buy all of these from him, too.
And for my stone and wood needs, I go see Robin.
I simply do not have time to be schlepping my farmer ass down into the mines for ores when they are so readily available from my friendly local blacksmith.
Same with tear-assing around the countryside digging up boulders and chopping down trees.
There are fair maidens aplenty to court, and my time is better spent doing that.
If you are worried about the cost, here are some numbers --
To make a keg using purchased materials -- 1725 gold. (You have to provide the oak resin yourself because no one sells it.)
Preserves jar -- 2500
Bee House -- 2500 (Bring your own maple syrup)
Crappy Sprinkler -- 1425
Quality Sprinkler -- 3050 (You provide the refined quartz. Go to the mine and get one, the put it in a crystallarium, which you can get by completing one of the Vault bundles.)
Copper bar (5 copper plus 1 coal) -- 525
Iron bar (5 iron plus one coal) -- 900
Gold bar (5 gold plus one coal) -- 2150
All very reasonable.
Now if only I could find a place to buy hardwood and iridium ore.
Now I need to go squeeze out a couple more Mining levels so I can get it.
I did, however, finally figure out how to build Staircases and warp my way down to the levels where the good stuff is, which makes the quest for ore much easier.
