Report a translation problem
As a general rue, I use kegs for my crops that take long time to grow -- starfruit, cauliflower, melon and pumpkin.
And I use jars for the fruits (peach, pomegranate, etc.) and the shorter term crops.
But this isn't a hard and fast rule. At the beginning, I will jar everything because jars are easier to craft. They only need wood, stone and coal, which is easier to get, whereas kegs require wood, a copper bar, an iron bar and oak resin.
And if I have a bunch of, say, pumpkins and some empty jars, I'll make pumpkin pickles.
I think the key is to not process cheap crops. Both the keg and the jar use a multiplier to calculate the price of their product. The keg, for example, multiplies the base price of any fruit by 3, co 3 time the base price of a melon is much better than three times the base price f an apricot.
There are exceptions -- wheat processed to beer), hops (pale ale), mead (honey) nd coffee beans (coffee) all should go in kegs.
And it should go without saying that if you want to make jellies and jams and pickled and wine, get the artisan profession at Farming 10. That 40 percent price boost is the best deal going.

but to keep it simple wine takes 7 days and jelly/pickles take about 2-3 days
Ancient Fruit = 550
Ancient fruit wine = 1650 (Base value) but if you store it in your basement for 2 months its worth (3300) Irridium Quality (without Artisan Profession) (with Artisan profession its worth 4620)
Ancient fruit Jelly = 1150 (Base value)
so if it comedown to time jar is better but you need double the plants aswell to fill the jars becouse of the ancient fruit takes 28 days to grow and then give fruit every 7 days
so again its what you prefer I prefer I use kegs got about 50 kegs on my farm and only 6 jars
Initially kegs are overwhelmingly superior for one sole reason: hops.
Hops plant, without kegs: 13g/d
Berries without jars: 20 g/d
Hops plant with kegs and artisan: ~220 g/d
Berries with jars and artisan: ~85g/d?
By year 2, hops are too work intense to be valid, but initially they're really cheap seeds.
In the super long run, kegs also win out over jars altogether, but other things win out over both, so I just build jars after a while.
Jar: Everything else.
Jars will have higher gold per day ratio, so most crops should go to jars. But, starfruits and ancient fruits are exceptions. They are two of three most profitable crops by far.

GPD for ancient/starfruit jam is still higher than wine, but you are also bounded by number of crops you can harvest. While, you can probably harvest about 7,000 starfruits at best, you can basically create infinite number of kegs inside of barns, turnel, quarry, desert, and sewer. Once you have enough kegs to process quickly, GDP becomes insignificant and total earned gold becomes a factor. Both ancient wine and starfruit wines are worthy of building kegs.
