If I join my friend's farm in a coop play, then I can ONLY play on that farm when my friend is online, is that correct?
If that is true, then if my friend stop playing indefinitely, then all my work and progress on that farm is lost forever right? I can't just start my own farm and carry the progress over?

Yes. It seems that joined players are bound to the host's save file (tried to edit my save for multiplayer due to my pickaxe missing but can't find it).

This doesn't work. The friend would still need to be there to walk to events and also to click "ok" every night

You could take the save itself by asking your friend to send a copy of it to you over email then you could put it in %appdata%/stardewvalley/saves then you could play it but then you would have to send it back and forth also you would be progressing their character and the farm but not your character

So if I use the host's save, then I will be playing as the host character right? Also, to my knowledge, the farm is shared, progress/everything goes to the same pool so there should be no A character and farm and B character and farm right?

Correct which lends fairly well to the farm creating a back and forth until they start up the save that you send to them which includes all the progress you made on it therfor progressing the farm which of course makes it easier for both of you to do more stuff and for you character to level up faster if you handle all the farm work available with your character it will level your character up faster increasing all skills

And you would want to play the save in single-player, or you'd have the problem of waiting for OK's from an inactive farmhand.
The farm and the host character would progress, but the farmhand would get behind :~)
