what should i upgrade first?
copper axe to iron axe or copper pickaxe to iron pickaxe?

It really depends on what you do and what situation you're in. If you're at, or close to the point where your copper pickaxe will not break some rocks, upgrade that for example.

Definitely the upgraded pickaxe is more important. You are going to need it upgraded to get deeper in the mines.

unless you are trying to get into certain other areas by the summer, and/or want to work on other skills

Personally I'd go for the watering can and then the pickaxe. Energy is at a premium early on and limits the amount of crops you can plant and water. Copper watering can reduces the watering by a third and allows you to make the money to buy the pickaxe upgrade & time to mine the ores needed to upgrade.

Definitely the watering can first. Then I usually go for the axe because you need a lot of wood in the beginning and there are other reasons that you will discover that you need to upgrade it for,

I like to upgrade the pick first, because I like to mine down fast and get gold early. That way I can make quality sprinklers. My goal is to have my whole farm watered by sprinklers by mid summer. Also, mining down fast means you come across more valuable gems to sell, which helps pay for other upgrades including your axe.

I usually don't upgrade my watering can at all. It would be a waste of money with sprinklers coming that soon.

I typically go...

Copper pickaxe
Copper watering can
Backpack upgrade
Iron pickaxe
Copper axe
Iron watering can
Iron axe
Copper hoe
Backpack upgrade
Gold pickaxe
Gold axe
Iron hoe
Iridium pickaxe

(Optional)
Gold/iridium watering can (optional because I typically have sprinklers everywhere by this point - it just depends if I have cash to spare, so I may as well upgrade it.)
Gold/iridium hoe (optional because you really don't need a good hoe aside from Spring, you can plant cheap/forage seeds later on to keep your fields plowed when the season changes)
Iridium axe (optional because trees dying in 6 hits is already very fast, whereas dying in 3 hits... half the time the tree hasn't even hit the ground before you're ready to move onto the next tree, and magnetism isn't strong enough in this game)

I never do the watering can as an upgrade instead I get the pickaxe upgraded and go down the mines looking for the items to make quality sprinkler which I think is level 6 farming, once you can make sprinklers your watering can really becomes useless so wasting money upgrading it just seems pointless

This depends i guess on your farm layout and activity choices (combat and if you have a layout which includes hardwood stumps within the farm area or not) Personally I would go for the Iron axe first because this helps gain access to another area and a source for resources used for crafting early needed items as well as possibility for additional skills level-up).
