If you were playing with a negative multiplier, so your stuff only sold for 75% of its value, then it'd sell for 1118 each, not 1190. Or if you took Rancher somehow instead of Artisan, you'd get 1278 for the oil, not 1190.
I can't think what would be causing your game to glitch, unless it's just you miscounted or something. If you've used any mods, maybe one of those has something to do with it, but otherwise... I guess just try selling 1 oil by itself and see what the price says?
Here's a screenshot to prove it.

I'll see if selling just one gives me 1491 when I play tomorrow.
Don't know what's causing the price drop for me. My skill is Artisan and not Rancher. (Also, I have no mods). Relatively, it's a minor issue, so I suppose I just have to deal with it and figure out a solution later.
If you're on the most recent version of the game, your truffle oil should be priced the same as anyone else. I think the prices of some Artisan goods were tweaked in 1.1, but that was... several years ago. I really don't know how you'd go this many years without updating a game?
If you're definitely on 1.3, and it's still broken, the only solution I could recommend is to try verifying your game's files in your game library. Right-click SV, go to Properties, and look for an option that says "Verify integrity of game cache". It should restore the game's files to proper, working condition, without harming your save data.
