Do you need to water sampling trees?
or they just grow without it?

Do you mean fruit tree saplings? No, you don't need to water them, they grow without watering. For normal growth, the 8 tiles directly surrounding the tree should remain empty though.

If you are in spring of year 1, I wouldn't recommend buying fruit tree saplings, since they won't give you any net profit on a short time-scale. Furthermore, you can at Pierre's see which tree gives fruit in what season, as well as that they need 28 days to mature and start producing fruit. With that in mind you can determine what trees you want to plant.

Keep in mind as well that fruit trees cannot be moved! So be thoughtful about where you plant them, since cutting and replanting is such a waste of time and money.

My advice is to plant them as early as you can afford it. Their fruits grow in rarity every year counting from the planting day.
