Report a translation problem
The mines can be split up into three categories: Levels 1-39, 40-79, and 80-120. You can find copper in 1-39, iron in 40-79, and gold in 80-120.
When hunting for ores, I'll usually use the elevator to check out levels 10, 20, and 30 for copper, 40, 50, 60 for iron, and levels 80, 90, 100, 110 for gold. Since ores don't spawn on a level that has an elevator, I choose those levels specifically because they each have a staircase given to you.
Umm.. what? There's tons of ore in the mines.
However: Sometimes you get lucky, sometimes you don't. You have to go back, and run the mines repeatedly. As Scapegoat said, use the elevator, check the different floors. Also, RE-check them, because they're repopulate if you from floor "A" and then to floor "B" and then back to "A" again.
There's also a Mining perk that will give you extra Ore per node. I suspect that most guides recommend taking Geologist and then either Excavator or Gemologist, but I usually take "Miner" and then "Prospector" personally.

Check the TV fortuneteller every day. Good luck days are your golden time. You can also boost your luck a lot with food, more than the daily random chance can give you.
How often do you mine?
To add to what the others have said, your daily luck has an effect on how much ore you find in the mines. If you're always going on a bad luck day (you can find out your daily luck by watching the "Fortune Teller" option on the TV in your house) you'll find less ore.
That being said, I usually get about 100 copper ore going from clearing level 15 to level 30 in the mines. Same for iron doing floors 40-55. Admittedly that's a full clear of every floor, but still...
If luck still not on your side, why not try the skull cavern. I think there's more concentration of ores even on early floors
I think that's part of your problem right there. 5-6 times in two game seasons is not much mining at all. In that phase of the game, where I really need to upgrade tools, I'd estimate I mine at least twice a week, if not more. This still gives me plenty of time to schedule fishing days when I feel it's a good time, gather wood, and even socialize with the town.
A mining day should be as close to an all-day affair as your other farm duties (I mean mandatory things, like watering crops) will allow. Rainy days are great for going to the mine.
Yeah, rainy and good luck combined with a bonus from the right food and there's no way you can leave the mine with less than a hundred of whatever you're after, plus a backpack full of everything else you find down there.
