I see the Riverland map encourage fishing. I will start a new game and go like this
Riverland does give you some nice opportunities to fish on your farm, and it's also a bit of a challenge for farming because of the limited space. Good luck though, and don't forget to also fish in the mountain lake and ocean for other types of fish.
Of course, that would also mean that you would have to forego the perks that increase the sell value of fish.

You can always play Ledegend of the River King, that game series was designed for it.
The Riverlands farm gives river fish, and fishing at the lake is typically better money... I like to fill the Riverlands farm with crab pots. You can use crab pot fish for fertilizer for Farming, so you don't need to make kegs if you don't want to. You can also get the sashimi recipe by befriending Linus.
But yes, you can exclusively fish in this game. I recommend taking the Joja route over the Community Center. It lets you pay cash to repair stuff. It'll give access to ore panning, which will help fishing a bit, mine carts which help get to the lake faster, and a bus to the desert to unlock the casino and get a rare type of fish for the collection log.
If you wait long enough to start Farming, you'll unlock a shop that sells the best tier of sprinkler... so you can continue to fish, but then start gaining additional income (and experience) from Farming.
My other question is if I go with CC can I go to the dessert? Or the JJ market is the only way? I want to complete the artifacts, fishing everything. Thank you.
The joja path is really meant for people not on their first playthrough, I think.
You can stay out past midnight, but your character will collapse on you at 2:00 AM, and you'll be transported automatically to your bed at home. There is no option to stay up all night -- at some point, you're forced to sleep whether you want to or not. Especially early on in the game, you don't want to be hitting the 2:00 AM barrier. It costs money because an NPC has to take your unconscious body home, and it also gives you a penalty on energy for the next day.

The Community Center and Joja give the same big rewards. The CC is more rewarding, but takes longer, and requires you play the game fully. (You'll need to collect metal bars, bat wings, fruit from fruit trees, animal products, etc.) The Joja route allows you to unlock all the major rewards by simple paying cash.
The CC can usually be done in less than 2 years, being about half done by winter year 1. Joja can usually be done by Winter, to an experienced player.
EDIT: Joja is the quick method, but fixing up the CC is the canon "true ending". If you don't mind mining, farming, etc. then I highly recommend you repair the CC on your first playthrough, and maybe try Joja on another file.
