THIS is so true. Females tend to be less competitive than males when it comes to gaming. There is now ay to argue about it, because studies have proven so. Just google it.
Competitive games usually have a more aggressive community and need a lot more time investment.
I'm not saying girls can't play competitive games. I'm saying that most of them are not good at it.
On the other hand, I know a lot of really awesome girl gamers that play games like Starbound, Minecraft and lots of single player games.
TLDR In my opinion its more the stigma of games that create a toxic environment which actively pushes girls away from it and guys towards it making the illusion of it being only girls like shooters are only for guys

As for the OP. I suggest Slime Rancher, Forager, and My Time at Portia for PC games your sister might like.
The game is cute, that is a point, USUALLY we love cute things (usually is not always, boys like cute things too).
I think the main point is like people said before, the game is to relax, it is a good game to spend some time and forget about anything else. That is not a girl preference, I think EVERYBODY loves Stardew Valley cause it is relaxing and we have fun.
The game reaches a variety of things: you can battle (simple, but still battling), you can be a farmer, you can catch fish, you can marry, have animals, talk to people and increase relationship, join the events... so that brings girls who like a small action with the battles, boys who like the calm farmer life, kids who like the animals, old people who like talking to the villagers...
I don't know, I can't see a reason except "relaxing and fun" and that is general.
Usually I prefer action games, but I like management and simulation, so I can say that in my case I like all features the game offers, and the less important is the villagers (of course I love flirting and being friends to everybody so I can access special dialogues/cutscenes, but that is the lowest feature on ranking of what I like, cause I prefer my character doing something, when I am talking I feel like I am not producing anything - time is money LOL ).

Racing games never seemed to bother me, but FPS games and some over the shoulder shooters do it. If I want to play one badly enough, I take Dramamine.
Yeah, I heard about that. There's also been cases where guys have posed as women to see just how "easy" they have it, only to be harassed until they finally quite and reveal their identity. Of course they don't exactly helping anyone by doing that, but two wrongs don't make a right.
Anyway OP, if your sister likes The Sims, might I suggest House Flipper/Garden Flipper? If she spends as much time building houses in the Sims as I did, it might be right up her alley. I've been playing it myself and surprisingly having a blast.
The entire conversation is a minefield. But I'll dare to put out my experiences on the matter.
First, I don't believe in explicitly toxic masculinity because I find the idea to be profoundly sexist. Toxic people are toxic regardless of their gender. And awful people in online communities are awful to anyone they don't like, again regardless of gender. That link to the twitter video. It was pretty awful, I won't deny that. And it was both unpleasant and sexist. But the other side is that those players are probably saying equally gross (if less sexist) things to men.
But it would be foolish of me to claim that NONE of the ♥♥♥♥♥♥♥♥ that comes from nasty people is rooted in sexism, it's obviously a thing and denying that won't solve the problem. How much is there? That's beyond my experience.

As for the actual topic of this thread, my anecdotal experience is in line with the mentioned studies showing a correlation of men towards competitive games and and women towards more social aspects. But again, it's complicated and not that simple. The variation between genders only attributes to maybe something like 10% of those preferences?
Still, the women I've known to play Stardew Valley focus their gameplay on interacting with the townsfolk, and raising livestock. Whereas I and the male players tend to focus on efficiency, business management, and completing objectives.
In conclusion: It's complicated.

my friend you've obviously missed the point. spend some less time on 4chan or reddit or wherever you've been fed this worldview. go outside and talk to people. enrich yourself. learn empathy and don't take every opinion that faces you with the fact that women are often treated unfairly, and your following discomfort, so personally. redirect your passion somewhere more positive. you can be better.
