Use trap bobbers (cork bobbers are also useful), easy to craft and it helps tremendously. Of course you need an iridium rod for that (so Fishing level 6 before it is even an option).
Note that apparently, using the Crab Pots DOES give EXP to level your fishing, although only a little from what I understand. So try and use those to level up and make the whole thing easier.

EDIT: Some meals like Dish'o the sea also increase your fishing level, which increases the size of the bar

I despise the fishing portion of the game as well. It's pretty much my least favorite part of the game, and I do it only to complete the community center.
However, even if you don't like it, there are ways to improve your fishing skill (without actually fishing) and once you've improved your skill, it does actually get easier.
The first thing is the Community Center Crab Pot bundle. The Crab Pot Bundle requires 5 items (and gives you 10 choices). Of these 10 choices, 4 of them can be Foraged from the beech. A 5th (the crab) can be found by fighting the hermit crabs in the mines. So this bundle can be completed without fishing at all, and rewards 3 Crab Pots.
You can obtain a Bait recipe by getting Linus to 4 hearts.
Once you have the three pots and the bait, you can simply place the pots in any body of water (bait them) and every day they'll "catch" something. You won't get a lot of skill from this, but you do get some.
The second thing is Carp. Carp can be found in the Mountain Lake (near Robin's house). Carp are sluggish, it's often possible to catch Carp without moving the green bar at all. Make short casts, and don't worry if you hook a trickier fish, just let it go. This will also give you some Fishing skill.
Finally, you can visit Willy on the Dock, he sells Trout Soup, this will give you a plus one to fishing, which helps a lot in the beginning.
So... even if you don't like the mini-game and aren't good at it, it is possible to progress. Once you've reached level 3 skill, you can make more Crab Pots for yourself. The higher your character's skill, the easier the mini game gets.
You're not alone in not liking fishing, but it is possible to get better at it even if you don't like it.
