(For example, one NPC's cutscene shows you sharing a bed with them at 10 hearts, and another has the two of you kiss on a hot air balloon.)
A few of the 8-heart events, namely Abigail's comes to mind, show that the NPC is starting to develop feelings for you, but it's up to the player to decide whether they want to take it further. 8 hearts for the marriage candidates is basically "best friend level".

The fact that you can date them regardless of your character's gender is what makes it conveniently bisexual. Taking the details literally doesn't matter at all in the slightest.
There are some characters that state they haven't or don't usually feel intimate towards people of the same sex. That implies that they are in fact bisexual whether they known it or are just discovering it to be with with your character.
But again as i mentioned before that doesn't actually matter.
They'll date whatever you character is. That is bisexuality.
Yet each bachelor/bachelorette has an opposite sex counterpart they're supposed to end up with it you don't marry them. Either this game features the Schrodinger's cat of relationships, or they're conveniently bisexual for the sake of gameplay.
Needless to say you get yourself into a whole heap of trouble, and there's a cutscene of you being confronted to go along with it that of course ends with you getting dumped.
Leah is the only one who can be seen to date a woman, despite being "paired" with Elliot, so she's canonically bisexual. The rest are playersexual, but then again, it's a videogame so it really doesn't matter. If you want the bi representation, go nuts! It's your own experience, do it how you want to.
