Fish for Willy was the only thing that didn't if I remember correctly. However, I don't remember that for sure...
The "fresh" in fresh melon does not mean anything. The only quests where you have to collect new stuff are the ore quests from Clint and the fish quests from Willy where you can keep your items. In every other quest you can use old items and you have to actually give the item to that person and you lose it. Did you give the item to the right person and did you "gift" it properly?
the fish don't have to be "fresh" but you do have to actually catch it for it to count--willy doesn't take the fish anyway, you keep them afterwards and just talk to him instead of gifting
if a villager asks to you gift them, on the other hand, it doesn't matter how old the item is. he should've accepted the catfish
Well then, for some reason it isn't the case for me. Both willy and the gifting quest did not accept the fish I caught beforehand.
