Ok, what happen when you go sleep at e.g. 2 pm and the Junimos are still harvest ?

Are you lose the Stuff or its in the Hut next Day ?

never lose the stuff, what's harvested sits in the hutt till you pick it up. According to the wiki.

The huts act like a chest. You can leave the harvest in there as long as you want, or even store your own belongings in there (just leave space for the crops).

You should give the Junimos until around 6pm to finish harvesting though if you've got a large field.

No. They're talking about the hut you can buy that harvests crops for you.
