The giant crop formation chance, according to the wiki, is not very large (only in the realm of 1%). However, if you keep watering the grown melons without harvesting any of them, the giant crop formation roll keeps occurring each day for the rest of the season, so you might get one in a few days if you're lucky.

If you really love the idea of getting giant crops and want to improve your chances, you will want to plant larger fields of cauliflowers/melons/pumpkins - the giant crop formation roll is rolled separately for each possible 3x3 square of grown crops, resulting in a sequence of chances as follows (this assumes that all grown crops are watered each day):
  • 3x3: 1 roll/day
  • 4x4: 4 rolls/day
  • 5x5: 9 rolls/day
  • 6x6: 16 rolls/day
  • 7x7: 25 rolls/day
  • ...

My advice - keep it.

Doesn't one of the fertilizers help your chances also?

But yes, keep your starfruit for now. Don't worry, at one point (if you take the Community Center route), you'll get to an area to buy Starfruit seeds. Or if your lucky the lady that has a shop south of your farm every Friday and Sunday, might sell it too.

If you're saving the Community Center, the bus will be fixed and in Oasis Springs you'll find Sandy, who sells Starfruit seeds.
