Off the top of my head, the Walleye can only be caught in autumn, and then only when it rains. Also I think they only appear later in the day.
You won't have to check every single fish's spawn season/time/weather/location, buy and take care of garbage animals like Rabbits, growing stuff like Wheat, getting three Apples of the same quality, that sort of thing.
On a second playthrough you can skip most of the annoying and unrewarding stuff and just do what's fun and rewarding instead.
It does have Pufferfish very often, and the Sandfish isn't rare either.
It can have the Walleye, but that one is very rare.
Krobus doesn't sell Walleyes.
