It's entirely pointless for Eggs to be Iridium-quality, though. They're always worth more once turned to Mayonnaise.
Iridium Milk is actually a rare exception in that it's worth more than the no-quality Cheese it turns into, but only if you don't have Artisan yet. Once you have Artisan, the Cheese is always worth more than the Milk it's made from.
Edit: I suppose they might make a decent enough gift. A lot of people like them and they give 67 Friendship. Not as good as 80 for a no-quality Loved gift, and quite expensive at 190g lost, but close enough.
Collections don't take quality into account. You can just send one Egg of any quality and it'll be sufficient.
