Definitely a bug. Getting animals to full Friendship does not take anywhere near an entire game year.
Never close the Coop door. It only messed with the animals' cycle.
If you're really doing everything right and they're not gaining Friendship, then you're experiencing a bug, but... I have no idea how the game was coded, so I have no idea what could be causing it. And even knowing what's causing it might not be of any help in preventing of fixing it.
However, since you seem to be the only one experiencing this, I would double-check that you're doing everything correctly. Always leave the Coop door open, pet them every day, make sure there's grass for all of them, make sure there's always Hay inside so they'll have something to eat on rainy days and winter, etc.
Except if it took an entire in-game year for you to finally see a half-heart increase, you might not be out of the woods yet.
Unless it's been fixed, there was a bug i read about. It had something to do with them going outside to eat and then petting them. It would cause too much happiness at once, overflowing the variable that stores it, and setting it back to 0.
Make sure to close the door each night. In the morning pet them inside the coop, then open the door outside to let them out. If you still have happiness issues then must be some sort of other odd bug or mod issue.
This was a bug with Mood. Going to out graze raised it to the max, then the small bonus for petting caused the value to go over the variable's max, which set it a few points above the minimum. The workaround was to emprison the animals so you could pet them before they went out to graze.
AFAIK that bug's fixed. I always left my Coop door open and never had any trouble raising the animals' Friendship.
