Report a translation problem
The factors deciding which fish you can hook are: location, season, weather, time and (in some cases) cast distance. The town river doesn't have the exact same list as the forest river, and the forest pond doesn't have the same list as the mountain lake.
Make sure you meet all the requirements, and then just keep at it to beat the RNG.

The infograph at the end has missing information, but it's generally a good quick reference.
Only tips I have are make sure you're fishing at the right time (season and time of day), and the right spot. Eventually you should get the fish you're looking for, if you ARE following the guide.

Here are some tips. First, never hold the bar. Continously click LMB. This gives you much more control than what you would've had if you were holding it down. Second, level up fishing. Go fish at the river on sunny days, or the ocean, and just catch fish all day. This'll level it up, and as your level increases, so does your fishing bar. Third, if you're a high enough level, you can purchase an irridium rod and some mods for it which'll make it easier to fish. E.g. trap bobber will keep fishes from moving as much while you're reeling them in (while they're in the green basically).
