Farming, for example, asks you if you want to be a Rancher (animal specialization) or a Tiller (crop specialization). If you choose Rancher you'll be asked to choose between Coop or Barn specialization when you're level 10, if you're a Tiller you'll be asked to choose between +10% crop growth speed or +40% value to all Artisan Goods.
Oddly enough the Artisan profession on the Tiller side is better for animal specialists than both animal specialty professions combined, so you have to know about the level 10 choices in advance.

Take Foraging, for example.
One of the skills lets you sell wood for more money. Which is a terrible choice. >_> But if you want to be a lumberjack, follow your dreams. Once you hit level 10, the skills chain off of this; one gets you more hardwood, and one gets more money from selling tree syrup.
The other level 5 perk is for foraging for food and flowers. Chaining off of this, you can either have a perk that points a tiny arrow on your screen to nearby foraged goods, to help you find them, or always give you the highest quality foraged goods, which is great for food and gifting.
Typically, for Farming you want the Tiller, then Artisan skills. For Foraging, you want the one that improves foraging for food.
Fishing skill tree is split between normal fishing and crab pots.
Combat is split between brute strength and dexterity.
Mining is blacksmith vs. gemologist.
