Eat them.

They're not worth much (5g each, I think), so they have the best Energy/cost ratio in the game.

Salmonberries are not worth converting to jelly or wine. By the time you get preserves barrels and kegs you ought to have far more lucrative options. I will eat salmonberries the first year for the occasional energy boost, but find the energy gain to be too low to be generally useful. Once I get better food options I sell them and don't bother harvesting them again.

They can be gifted too.

i saved mine until I got the jam thingys. Then they carried me through until my trees were producing fruit and I had strawberries.

If for some reason you really want to gift someone wine, then salmonberry one is the cheapest wine you can give. But most of the time I think it's better to just give something other than wine.

If you have a huge jam-making setup I don't see the point in even harvesting them beyond perhaps the second Spring. That said, if you do have a huge jam-making setup you can use Salmonberries when you don't have anything else to make into jam.
