If you made the horrible, horrible mistake of becoming a Rancher, it's actually better to sell it raw (456g) than cheesing it (360g).
Normally you'd be an Artisan, in which case it's better to cheese it (420g) than to sell it raw (380g). Of course, the 40g difference might not be enough for you to bother processing it...
Any particular reason you're asking? Why wouldn't it be better to sell it for more?

And the reason i'm asking is that i'm not level 10 farmer yet, and i don't know if not being artisan (though i will soon enough) would make or break the difference.

Yes, Artisan's bonus is +40% so it does make a huge difference. The milk sells for 380g, but without Artisan the cheese only sells for 300g.
