Dialogue Changes
Does a charachters dialogue change when you start dating them i.e. at events?

No. Some of the festival dialog changes after you marry them.

edit: dialog of other villagers may change as well to reflect the marriage.

Actually, your spouse almost never says the stuff they did before you got married, so it's not just festival dialogue.
