Depends.
Your energy won't fully replenish if you go to bed closer to 2 AM, but if you finished the previous day with lots of energy leftover you don't seem to pay the full penalty (normally, you'd start the day with only 50% if you got to sleep at 1:50 AM). Also, if you're producing massive amounts of food and have Iridium tools to conserve energy, you can easily just pop food to replenish yourself, so starting the day with full energy becomes irrelevant after a point.
However, you're charged money if you collapse in town (it's only 1k, less if you don't even have that). I -think- you may be subject to losing items if you conk out in a dungeon, so I advise carrying around a warp totem if you plan on maxing your clock so you can at least get back to town.
