Its weird because i always thought ancient fruit was. The way you get ancient fruit is kinda random and hard to get since you need to dig out the ancient seed artifact. Then the guy at the museum will give you plantable seeds.
It only makes sense that ancient fruit products produce the most money. But its not. According to the wiki, its starfruit.
Both are best grown in the Greenhouse so as to avoid the issue of dealing with seasons.
For the Jars, whatever berries or veggies you have. There's a base value added, so you get more of a bump in value from using cheaper stuff (like Salmonberries) but if you only have a few Jars, then it's better to use a higher quality berry to start. Typically, I process Cranberries and Blueberries.

Jelly, you want fast-growing decent value fruit, such as blueberries.
I prefer making beer and jelly, myself. I don't have the patience for wine.
Starfruit is the most efficient to make wine out of, which triples its base value. If you then throw it from Keg to Cask, you can break 6k per bottle, albeit there is a LONG setup time. Starfruit's also slightly more available than Ancient Fruit, as you can buy the seeds in the Oasis and grow them during the summer.
Ancient Fruit is a great second-best though, and unlike Starfruit is much less maintenance (which is why my Greenhouse is full of'm). However, it has maybe 2/3 to 3/4 the value; can't remember off the top of my head. Getting the seeds can be annoying, but you can do it if you have a seed maker (or ten). Unlike Starfruit, Ancient plants keep producing after they've grown, so even if you only get one seed from one Ancient Fruit, you still get to make more plants than you started with, and I believe Ancient Fruit plants grant their harvest faster than Starfruit once grown.
Little pro-tip, Starfruit is Summer only, and normally you can only get 2 harvests of it UNLESS you use Deluxe speed-gro; if you can plant a giant harvest of Starfruit on the first day of summer, you can get three harvests instead of two using the special fertilizer to push its growth time from 13 days to 9 and come in under the wire.

Also, jam vs wine. Wine triples the value of a fruit, while Jam gives it 2x +50. Jam tends to be more efficient with cheap fruits, while Wine is more efficient with expensive fruits. That being said, Jam also takes less days to complete; if you prefer quick returns or need to blow off a large stock, make Jam - otherwise, just make more Wine.
Edit: I haz numbers. My gold-star Ancient Fruit wine sells for 3465 when you factor all my perks. My gold-star Starfruit wine sells for 4725. So yeah, the difference is there; you could probably figure out which is more time efficient versus resource efficient if you really wanted, but at that point we're just splitting hairs.
