I can't be assed to just walk around and try to see if I forgot someone, since it's not shown who is still to be talked to in order to complete. Will the game progress nonetheless if I don't talk to everyone right away?

yes it will progess, and the first festival should give you the opportunity to chat with everyone you've missed

I don't think it counts talking to people at festivals towards the quest. At least on my playthrough it didn't.

I used wiki to track everyone's schedule...Friday evening at Stardew Saloon is your best chance to meet people that you won't usually see. If you are missing one of the ladies(married ones, not the bachelorettes), try Tuesday afternoon at Pierre's shop by entering the door next to counter(it requires no friendship to open, that's still public space.)

My first game I couldn't find Elliot until the Egg festival, he was the last villager I needed for the quest, it worked then, but that was a few updates ago, so maybe its changed

You can check who you haven't talked to in the social/relationship menu. Those who are not there are those who you've yet to make introductions to.

There's no progression related to that quest. You'll get some money for completing it. Take as long as you want. In my first game it took me until Fall to complete it, mainly because I was just lazy.

wrong you get your dog/cat after the quest. I made alot more then 1k gold and still never seen my pet till summer 14.

made new game and met everyone and got my pet on day 3. unless my game was bugged. I always have to do that quest to get my pets.

Nope, I got my Cat after making 1k in the first month AND I am in year 2 summer just finished quest (lol)
