Does date of marriage matter at all?
As title says, should i pick a date I like or it does not matter?

Doesn't matter, for the most part. Your anniversary and wedding don't affect anything time-wise. A lot of people like to have their weddings on holidays, I assume you can do it in SV. Marrying Abigail or Sebastian on Halloween, or Haley during the Flower Dance...

I've never had a spouse acknowledge an anniversary though I'm not sure if the game remembers it. you can't get married on festival days though.
