Preserves Jars take between 4-5 days depending on what time you put the product in and what time you check it to harvest the pickles. All the machines and refinery objects in the game run based off of a 'tick' system, which also powers the ingame clock. When you go to sleep it passes a certain number of ticks which is meant to keep the machines on schedule but can be tracked to get things done 'sooner'.

And why have you put a parsnip into the Preserving Bin?
Do that either with some really Expensive Veggi or Fruit or with the Free Stuff you can Garther around the Map...

I usually make What-Ever-Berry or Ice Fruit Jar... relating the Season i am in.

Anything you put in the Preserves jar will double in value, and add 50g on top of that. So the more valuable something is, the more valuable it'll be when it comes out- Wine outperforms it in most cases, but with your vegetables and forage, pickles/jam are a good way to boost your profits a little.
