Do dinosaur eggs come out of geodes?

Do they? Also, if I go out fishing. Don't get a single dinosaur egg. Could I just reset that day and try again?

Dinosaur Eggs won't come out of geodes, no.

If you dig around in the mines or find worm tiles in the "mountain" tile of the map that's where they usually come from, otherwise the fishing treasure chests are a possible source if you're patient.

If you're okay with a bit of exploitation of the game's code... The Wallpaper Bug can actually get you a Dinosaur. Purple paper with white polka dots, bring it to the incubator and it'll hatch just like you put an egg in there.

I do not believe eggs can come from digging with a hoe in the mines.

I have also found no proof of it and my experience jibes with all that. have you found any this way... do you have proof (i will take your word for the purpose of this discussion)

I can't anecdotally confirm, but the wiki does imply that artifacts can be found with hoe in the mines:

I haven't gotten one since the 1.11 patch, but in my first play through I got a Dinosaur egg just from digging up worms.

I've gotten one since 1.11, but it was worms/stems/whatever. And only the one.

I read you only get it from digging spots which are in the mountain, so Robins place and it is where I found my first one. Always best to make it into a pet first so you get more and not have the hassle of trying to find another...

That's where I got my first dino egg, level 63 of the mines. I've been super lucky apparently from what I'm hearing.

I didn't think it was noteworthy enough to screenshot at the time, so I'm afraid my word is really all I can offer there.
