I'd suggest going deeper into the mines. I can't actually recall when you start getting coal/ore, but I'm pretty sure it's around Floor 25 ish. Well, that's about the time you'll start finding it more, common, rather than it being rare.

If you're having trouble proceeding due to HP, or Energy, I'd also suggest fishing, since it's free, and fish generally give you a decent amount of energy, and HP. Then again, my fishing is already nearing skill level 10 again, so I'm always catching Gold Star fish.

I personally don't even think about heading into the mines until my fishing is at a decent level, where I know I've aquired enough money, to self sustain myself.

P.S- Fishing usually takes 8-12 days depending on how hard you're going at it, to raise it to level 10. By then, you'll have enough money/fish to stay in the mines until 1am every day (though, I recommend leaving earlier, due to you passing out at 2am).

you can mine as long as you want just whenever you start to pass out just go in and out of your journal and you can use one more energy point and just reapeat that until you are done

Dust sprites from level 40-80 drop coal commonly. You can make charcoal kilns to turn wood into coal. Trash recycling can give coal. Clint sells coal.

Floor 40-60 or 70 has these enemies called Dust Sprites. Little black hopping puffballs. They fairly frequently drop coal, and those are the floors with iron ore as well. You'll tend to spend a lot of time around there for both coal and iron.

I push through the mines in the first season, because I really want Quality Sprinklers for Summer. Money usually isn't a problem, since I grow a lot of potatoes in that time. Spring Onions and Salmonberries for energy.

You can also turn wood into coal using a thing you can make...

Clint sells coal for 150 a piece.
Robin sells wood for 100 per 10
Willy sells Crab pots for 1500 per 1. bait for 5G

You set a bunch of crab pots 50% of them produce fishing trash.
Fishing trash recycles.....Trash and Driftwood have a chance to recycle into 2-3 coal....not sure the odds. the CD's and Glasses recycle into refined quartz saving the need to use a piece of coal.

Just saying if you were going to buy 100 coal from clint thats 10 crab pots which would, over time produce enough fishing trash to make coal far more cheaply and pay for themselves

Dust sprites drop coal.
Everything in the lava caves seems to drop coal.

So....Go to level 40-80. find an infested floor, hunt dust sprits till you kill 500, get the bandit ring. either continue hunting dust sprites or go to the lava caves.
Indeed, I find having the 1 charcoal kiln helps if you have a surplus of wood to burn, but if going mining, the dust sprites drops them often enough that you tend to have lots after every trip.

The recycling machine, can't live without it! I will recycle all that junk you find into something a bit more useful, so save up all that trash!

I'm using the automate mod and putting 1 chest between the worm bin and recycle machine and 3 crabpots along the water in front of it will take care of my recycling needs. Worm bin makes bait, then it gets sucked into the chest, which then spits it into any empty crabpot, overnight it'll catch something and the pots gets emptied by chest which will push the junk into the recycler... and the results gets sent back into the chest.

Also works great for the furnace and charcoal kiln! almost fully auto smelting and charcoal making that way.
