Each seed is a puzzle:
* The Spirit of Plenty is alone and very fast. You might want to slow him as much as you can. He has low resistances too which mean sthat is is vulnerable to both magic and physical damages (if you left click on an enemy in game, an Information panel pops up). I'd go with single target towers and try to slow him as much as possible.
* The Seed of Health is trickier and requires multi-tasking. Those big spirits will heal everyone if you don't kill them soon enough (but there might be a way to silence them when they cast their spells...). You will have to kill/silence the big spirits while collecting enough Infamy to upgrade your towers as soon as possible.
Good luck!
