Then there is a subset of the latter that knows (possibly from experience) that a single backup is just not enough and is worth nothing if restoration capability is not regularly verified.
My windows file history uses a mapped networked drive that runs from a local linux server via samba, that drive is actually two HDDs with RAID 1. Though any secondary sata/USB/PCI drive will suffice.
Unfortunately I did not have any 'Previous Versions' available in the folder's properties :(
BUT I found out that there is still a way.
If Steam Cloud overwrites your save, all it does is overwrite the profile.cfg file in Users\"username"\Saved Games\metro exodus\76561198012564321\game1 folder. Right outside of the game1 folder there is a copy of the local profile.cfg file. This profile.cfg is your latest *local* save game.
Make a copy of the profile.cfg in \"76561198012564321" folder.
Overwrite the profile.cfg inside \game1 with the one 'outside' of \game1 folder.
I was able to restore my save this way.
This also restored my sensitivity/fov settings as its also stored in profile.cfg
