The Knights and How to Get Them [HEAVY SPOILERS]
HIIII i have like 30 hours on the game already and I really love it. here's all the info I have regarding any and every knight I know how to get!! in alphabetical order... secret knights have been marked spoiler!!!

Alwena: have your entire table on quests. In the afternoon, check on your empty table. She'll be there to offer some help! she only does quests that are one day cycle and if it needs multiple knights she can only be assigned last to ensure someone else comes with.

Angelica: at the start of the game ^^

Ari: In act 3, ask Rodrik and Gotfrig about having a griffin, they'll suggest you their younger brother.

Arron: defeat the Dragon Knight! He will introduce his greatx7 grandson

Brunhilda: you can either get a great success in your first run when negotiating with the princess of Gavault (that's how I did it), or use your demon power to time travel back and tell Mathilda that you already know who it is and will request an audience with her. she comes the next cycle and if you have enough audacity, she'll join your table!

Chester: when he tells you about the eggs, send Angelica to befriend the goose. On the second quest, send Gwendan who will steal the eggs. He comes back and you can ask him about the goose being lonely, to which he will request to join the table.

Childeric: Despite him begging you to lose the competition, if you win, he will instead request to join your table!

Daguez: a rebellion will break out in act 2! you'll be given three options, one of which is to knight one of them at your table to show your esteem. pick that one for Daguez!

Dulahan: if Goberto is killed, within the next couple cycles Dulahan will arrive to your court! for the achievements, make sure that Goberto dies from a quest with heights, as it'll induce an unexpected outcome where he dies.

Edith: when speaking to the archmage of moovale, at one point you can ask "do you have someone with both dragon knowledge and mage abilities?" the next cycle Edith will come! that's how I got her but i've seen different things about her so idk...

Epicrate: when asked about transporting him, if you have enough audacity you can instead break him free. Alternatively, prove him innocent in the trial (i think, i actually broke him free from his jail so im not too sure about the other option!)

Gideon: wanders into your court! Act 2

Goberto: wanders into your court! Act 1

Gothild: Resolving Enberg's murder trial which ultimately ends up implying it's Victoria... if you kill Victoria it frees her to join you! alternatively you can defeat victoria in the early game to recruit Gothild within the first two acts

Gwendan: wanders into your court! Act 1
if you send him away for his debts he eventually returns with a new look... and joins your table again

Ligia; to my understanding you need to win the lamp quest before the 3-cycle deadline, then go back in time as someone else has found the lamp before you do. I haven't personally gotten her yet! I messed this up in my first run and im working towards it right now.

Oliver: in the opening minutes of the game, that knight that tries to kill you? just spare him. wanders into your court! Act 2

Rufus: not separate to the beast, he transforms from the beast! once the wolf is in your table, complete the remove the curse quest in groveshire and belladonna the witch will cure him. Act 3!

Silgur: "kill the beast" in groveshire quest! wanders into your court! (late) Act 1

Tarcus: after mathilda asks for your help in storming the revolt fort in gavault, Tarcus will come right behind her and offer his services!

The Beast: send angelica to the "kill the beast" quest! doesn't matter who her companion is. Will visit the court in the next cycle.

Zolta: Play through the Kutnar questline and beat the final tournament with a high-tier participant like the wolf (from what i hear, i messed this one up too) then accept Kutnar's minimum tax tradeoff, and then hire Zolta for 250 gold. OR you can cheat in the second challenge, and Zolta will compliment your "artistry" and ask to work with you!

I know some of these fantastic knights transform however I don't really know how! Any help with that would be greatly appreciated! lmk if I should reorganize this or if anything is incorrect!

Some of the transformations:

Gobert : Send him to the Almor tournouament's last segment, the one Childeric asks you to lose on purpose. He returns in some legendary armour and upgraded stats with a new trait that lets him tank quest damage.

Ursula: Have her fight the Kingslayer. Not a good result

Edith: Send her to a quest that involves murdering someone. she is obviously possessed or something afterwards, since her sword has a demon or something similar in it. I did not see any further options afterwards

Oliver: Do his quest line, send him to the magic academy when prompted. He gets a big magic upgrade and possibly some extra things.
I suspect the Rebellion quest is not scripted, and appears only when the player allows one of the public support metrics to drop too low.

I have never seen this event, and I think that might be because I'm playing too well :Sadclot:

(It could be just a random event, too...)

I can confirm this, and it is related to the support meters. Specifically, they would need to be under 20. I assume it is 20, because I got the Noble rebellion when their score was under 20, and the achievement for getting all groups to like you also has a requirement of 20+ per group.

So far I'm on cycle 20 and I don't see any uprisings, although the parameters are already dangerously approaching the 20 mark (from below!).
Potentially one of the most challenging events I swear.

Same thing with Oliver. I saw that he should appear on cycle 19 if you don't kill the knight in the intro, but I haven't seen him even once?
In my playthroughs (one savefile), I hit the knight with a stone only once. Either this is a point of no return that ruins the entire run, or I’m (or we are) missing something.

Me too! I personally haven't gotten any uprisings and I have my nobility support at 5 and I'm in act 2 of NG+, cycle 22. I'm a little lost on how to get him now honestly... but I used what I had seen online to fill out his part of how to get him.
There may be another requirement on how much higher the other groups are. In my case, the nobles complained that they are treated worst than peasants (people were at 40+). I think it happened near the end of Act 2 or start of Act 3.
Ligia is pretty easy to recruit: Just do her questline and investigate the markets rather than the island. You'll then have to decide between buying or stealing the magic lamp. Either option is fine, but you have to be honest with her if you steal it. Then just hand it over to her when she asks. She'll come and ask to join your court after her dad is healed.

You can somehow do both options, and then also suggest Island to her (it's a different check, for some reason?). In that case, the lamp is yours

Did it. To get people to declare their intention to rebel, you need to tank one of the satisfaction parameters (it honestly not that easy). I’m not sure if the parameter for this should be below 20, or if it should differ from the others by a significant margin (10, 20 points).

Still didn't find Oliver though.
