Id reccomend you look on youtube for some videos on them shouldnt be hard to find pretty much every fpv youtube channel should have a video explaining what they are and how to set them up
Adjusting rates is best left to dedicated (video) tutorials, and basically come down to personal preferences and what kind of style you want to fly. They allow you to adjust how your drone reacts to your inputs: how fast should the drone react on a specific axis on a certain input. This is visualized in the curves you will see in the 'Flight Controller Settings' window. There are different curve models, and you should be able to find plenty of guides on how to get them to do what you want. :)
Another small tip: under the assumption that you're just starting out with Liftoff, I would recommend trying the experimental version of Liftoff, since we're doing a big update on physics and performance, as well as an update to our flight controller. It's optional, but it might save you a few moments of frustration in where you're building up muscle memory now, and have to re-adjust somewhat due to the changes of the update when it goes live on the main version. I also ordered the BETAFPV Literadio 2 SE so I have a beginner remote controller which I think is the better solution for practice than a gamepad.
Later on I want to buy real equipment. But practice first.
I will test the experimental branch for sure. I am glad that you still do updates and hopefully with your software I can have a nice start in the world of fpv.

In the tutorial when (like in the video shown) I only raise the left stick the drone drifts off the the side and I cant fly in a straight line. Even after hours this wont work. There seems to be some kind of calibration problem (I did the calibration in the simulator). In the race I cant even fly in the second target, because i cant move right.
I know that I need many hours/days of practice. But I don´t think that I need days for just flying in a straight line. I dont find any tutorials for this pad in lift off.
You're currently better off following some general guides on youtube (either from real life or simulators) and try to replicate what they do. Joshua Bardwell has a series of tutorial videos which you can directly translate into Liftoff (we based our tutorial of the console version of Liftoff on them).
Or, just start flying in Strawbale in free flight, and try to set some simple goals like flying through a gap in the fence, or through the barn. And then continue onwards with a simple track like the 01 track.
