The Jumper T16 is an OpenTX device, so it should work well in Liftoff, even on mac (the Taranis QX7 and X9D+ work as expected on my mac here)
EDIT: What firmware version are you using on the remote? Seeing some other people with newer (newest?) firmware (I'm not a specialist on this front) seem to have some trouble still getting it to work reliably.
I know Freerider uses a very basic input solution that isn't flexible in detecting all ranges of values and that Liftoff (and some other sims) use the same input plugin that is more advanced but is more finnicky in working on every system. Perhaps this is still a difference that is at play here and the firmware may be interfering with it.
