why in 2 weeks I had 3 automatic updates of several gbytes? it takes hours to complete, and furthermore is it possible to set an option to avoid updates and still play the game?

You can read why updates happen in the 'Events & Announcements' section of the Steam Discussions for Liftoff.
As far as I know, it's not possible to halt updates for games in Steam, unless you're playing in offline mode.

I do hope changelog point "split up large game files into several smaller packages so that future updates to textures and materials will result in smaller updates." will give fruit, because as a new Liftoff user who downloaded this game both on my Win and Mac machines, I've never seen a game requiring to download most of game's size during update process. I believe I've spent more time updating this simulator than actually practising in it :)

We try to keep updates smaller, but the recent ones have been larger than usual due to some bad timing. This is mostly because of our engine update and the follow-up fixes needed for the levels, like lighting adjustments. Unfortunately, even small changes to a level mean the whole level has to be redownloaded, which we can't avoid. Big updates aren't something we do on purpose, they just happen sometimes as part of necessary improvements. We wouldn't do it unless it was necessary to move forward.
