I keep all my rates the same between Roll, Pitch, and Yaw. Currently I'm using:
Roll - RC Rate_0.99 Rate_0.64 RC Expo 0.01
Pitch - RC Rate_0.99 Rate_0.64 RC Expo 0.01
Yaw - RC Rate_0.99 Rate_0.64 RC Expo 0.10
Rate is usually labelled as "Super Rate" in beta flight I believe. That's what gives the actual curve in the graph. RC Rate is the starting sensitivity.
You probably want to end up somewhere between 500 (typically racing) to 700 (for freestyle). Obviously some people use higher rates like 800 or upwards of 1000, but that's not going to give you a lot of control and arguably spins will look too fast.

I was mentioning DJI FPV on purpose as I have one and there in googles under settings for manual flight you have "Actual" model of setting with Center Sensitivity, Max Rate, Expo.
In meanwhile I found settings more suitable to my current level of experience.
