I'm happy you are excited about the game. As you noticed we currently don't support triple screen support yet. While it's currently not on our priority list for the Early Access, it's something we might have a look at in the future.
Is there any way i can force it to 1920x1080 for the time being then? I'd really rather not have to unplug two my of monitors each time i want to play.

I'd recommend a refund until they add support for multi monitors
Run Regedit.exe and go to "HKEY_CURRENT/Software/ Lugus Studios/Liftoff". Change the "Screenmanager Resolution Width_h182942802" decimal value to 2560 (The horizontal res of one monitor). Restarted the game and problem solved.
I'm running in fullscreen (the two side monitors are black), but if you want windowed change the value of "Screenmanager Is Fullscreen mode_h3981298716" from 1 to 0.
If for some reason you can not access the graphics menu anymore, editing this registry value will indeed do the trick.
