I use an Interlink Elite USB radio (by Futaba, for RealFlight simulator), and I use the mode switch (the 3-position switch on top right of the radio) to switch flight modes in Liftoff. I make sure it is in position 2 (in the middle) when manually creating a profile to calibrate my controller. I just did this walkthrough in a live stream yesterday, just to archive the calibration process.
Make sure that The mode you are configuring is set to "mode 2", and when prompted to bind additional buttons, make sure to bind the mode switch to switch flight modes. This allows me to switch from self-level mode to/from acro mode by flipping the switch (even though I don't use self level).
For extra assurance, set modes 1 and 3 and make sure all of the optional keybinds are correct, to be able to switch back. I've never used a FrSky Taranis radio, but I'm assuming it has the same mode switch for changing flight modes, I would hope it would work, since my Interlink Elite is at least 10 years old now. The Taranis should be much newer than that, hopefully that helps.
