Change Difficulty Before Final Boss Works - All Achievements Pop - Confirmed
I remembered something about this from the old days. Reading the thread listed at the end of this post reminded me that it can still be done, except that in that thread, the OP says you can change the "Difficulty" setting in the menu right after defeating Atlas.

For me, the "Difficulty" setting is greyed out in the menu, so before going up in the elevator to fight Atlas, I changed GameDifficulty=GD_HARD to GameDifficulty=GD_EXTREME in "Bioshock.ini", saved it, then started up the game.

I can confirm that this works. After Atlas is dead, the following four achievements pop in addition to the two unrelated Little Sister ones if you went that route:

- Brass Balls (complete game without using Vita-Chamber)
- Seriously Good At This
- I Chose the Impossible (complete game in Survivor difficulty without using Vita-Chamber)
- A Man Chooses

Note that I played the game in Hard mode, not Survivor mode. I also experienced many crashes during the course of the game that reverted Hard mode down to Medium mode and missed out on reverting my save, because I didn't catch it in time, so for the time being at least, regardless of whether you experience crashes that reset your settings or not, all is not lost, and there's no need to panic. This essentially means that whatever level you are playing, and whether you encountered crashes or not, as long as you have your correct difficulty setting in "Bioshock.ini" prior to going up the elevator, you'll be fine. It doesn't mean that you have to pop the "A Man Chooses" achievement without having earned it. That's still up to you. You can just leave the setting at Hard if that's what you were playing throughout, so that you still only pop the "Seriously Good At This" achievement, then do Survivor on a proper run through.

What's the point of achievement, if you didn't actually got it...

You're right. There's no point in that case. There are some people who want to kill two birds with one stone to get things out of the way even if it isn't earned. In my case, I did it to test things out while I had the chance, because I actually wanted to see if that edit still worked. It also at least shows that we all don't have to worry when the game crashes and our settings get bumped to default. I'll probably end up doing Survivor mode next time anyways, so it won't matter, but your point is well taken.

Cheers!
