The first, an inventory for plasmid's and gene tonics, is found in a Gene Bank. There you can choose what Plasmids and Tonics you want to equip. In the first game they are sorted by Physical, Combat, and Engineering Tonics. In Bioshock 2 they are all just Gene Tonics. There is normally at least 1 Gene Bank in every level. Only exceptions are EVERY level before Neptune's Bounty, and the final level. In order to equip more you need to purchase Gene Tonic Slots.
The second one is Audio Logs. Audio logs you can see your full selection by going into the menu. No not the pause menu. If you open up the map, key for doing so can be found in keybindings. You can scroll around in the menu and find all the audio logs and radio transmissions you have recieved. Press M by default to open it. It's in those menus and I forget which one specifically.
