The "speak in red" is a rule she enforce to be a proper detective game and prevent circular argument. Everyone in the room can "hear" the red text as you (reader) read it.
To make it more simple, as far as Rokkenjima is concerned, there are two layers. There is the Episode itself, where all the murders happen. It is like a theatre where all the people who appear in it are actors (or chess pieces, if we are to use the game's metaphor). Above that layer is the Meta World where Beatrice acts as the game master (or the script writer, in a way) and Battler acts as the audience, interpreting the events presented to him by Beatrice while arguing with her about what they ultimately mean. The two worlds go by different logic and rules. The Episode World resets at the end of every Episode. The Meta World begins at the end of Episode 1 and is continuous. In a way, the Battler speaking to Beatrice and the Battler who is at the family meeting are kind of separate, with the former controlling the actions of the latter (I think? it's a bit ambiguous) while the latter is unaware of the former or indeed the meta world at all.
As for whether the Battler who appears in Episode 1 is the same as the Battler in the Meta World, I'm honestly not sure. If we are going by the manga adaptation, there is some indication that Battler in the Meta World is also just an observer of Episode 1 (like he is right now), but he simply has no role until the end of that Episode. It is very confusing. Like I said, best just roll with it.
