Scrolling with the mousewheel, but I guess you don't have one? You could always try PageUp/PageDown, and if they work for hotbar items they might work for rotating as well.
I've walked away from it to do stuff around town, and it kept going. It seemed to stop at 15 wooden planks, but that might have been me getting too far away as I went into the woods for a few butterflies.
I'll do some testing on the signs and alternative rotation/hotkey things for you (honestly pretty addicted to this game at this point so might as well).

Yeah, I lack a scroll wheel -- I use a trackball. I could use a controller -- but the keyboard and mouse is easier for movement and block placing / interaction since I'm so used to playing Minecraft that way. Alternatively, the ability to customize controls would be a good thing to have.

The file I found is Staxel\content\defaultControlBindings.config
I might go poking around if I get desperate, but for now I'll leave it as is rather than mess with something with which I am unfamiliar -- I'm used to not using anything past 6 most of the time because of the stretch when using WASD. Not a big deal, was just hoping there was something I was missing!
