When I create a scene, I can only have 1 node tree?
Lets say I open a scene, and I want to create 2 sprites that are at the same level. Is that possible? Or do I need to create an empty object to do so and the 2 child sprites?

I just found that you create an empty node in the scene and then put the childs from there, for the whole scene I mean.

That root node should not have functionality, it's just for arranging the tree in a more confortable way, so I guess in this case it shoudln't matter. But I will keep that in mind, just in case it did.

I think in Unity, their root was an empty object, like that "node" but just added by default in any scene.
