As answered on this thread, there's 1 New Game+, which virtually makes you level 60 (potentially 4 on 5 maxed gods).
Not sure about how it'll work, doubt you'll start New Game+ way stronger than your first clear.

Be aware that it is up to you, how New game+ will look like. You can actually set the difficulty level for your New Game+. So if the previous playthrough was too easy, you can for sure set the difficulty higher (or lower, when it was tough inthe first place, for sure).
But be aware that New Game+ also the enemies will adapt to your level and it might not be an easy run anyways. ;)
Additionally level 60 ist not the highest level you can get, but there is no set level cap. So I do not know where you got the info with 60 being the highest level you can get ;)

You said you could get to level 30 with the first run (unlocking 2 gods) and that we can only do 1 New Game+, which unlocks 2 more gods. 30+30 got me to 60.
If I'm wrong, how do levels work? If there's no level cap, does it mean each time you level, you'll find&craft gear with potentially better stats?

I just made an example of a possible walkthrough, or to be accurate of my recent playthrough.
This is the same playthrough, which I used as example of the possibility and variety of character builds.
Here I rarely did hunts and I did not do any trials, no co-op at all, and played on warrior (normal) difficulty.
But there is much more to be done, such as e.g. going for hunts more frequently and repeating more often, if the player wants and likes.
Those hunts will give you not only materials/resources you need for crafting new equipment or upgrading your village, but also blood, that is essential in order to level your character/s as well as loot drops that will still occur (in hunts you will have slightly different challenges and no boss-fight).
Additionally you can do Trials of the Gods already starting with Level 2, hard but not impossible that early. This also will get you materials/resources, as well as runes and equipment, depending on how long you will survive and/or even master the specific trial.
So in one playthrough you can also get over level 30 with your character, or you can also be slightly below 30. That also marks the time you might need in order to get through the game. This can be 20-30 hours, without hunts, trials, co-op games, or way more playtime, when playing those as well.
Also be aware when joining Coop games, you will not lose your progress, but you will be playing along the porgress of your host. For sure this will also earn you blood, materials/resources and random equipment loot-drops.
For sure the level of your character also will define the equipment you find. If it comes to crafting, you also have to check, if e.g. your smithy is upgraded. It will be essential upgrading your village and their inhabitants, such as e.g. the smithy or armourer in order to be able to craft better gear, or equipping higher tiered runes.
Summed up:
It all depends on the player's skill as well as players actual playstyle, that will determine the level in specific points of the game, like in this example being on the step to New Game+.
Also while playing, players can also do following in addition to the simple playthrough in order to advance and enhance the character, before entering New Game+, or for sure while already doing New Game+:

When you say there's no max level, do you mean that :
1) Craft : your smith can always be upgraded, meaning there's no maximum stats you can achieve on a crafted items? Are stats random on each craft between a min and a max, or fixed by your smith level?
2) Dropped items : do their stats depend on your level or the level of the zone you're fighting? Are stats randomized or fixed for an item level? Since there's no level cap, does that mean that you'll eventually find items of higher level, thus better items? Or is there a theorical value the stats on an item can't go above?
