If it comes to the classes/gods:
When starting a new game, you get to choose from one of five Norse gods, each of which are tied to a particular weapon style:
Each slain enemy takes you one step closer towards unlocking a weapon style’s true potential.
But to unlock its full power, you should consider focusing your efforts on one weapon style. This doesn’t mean that you cannot use other weapons, but a jack-of-all-trades will be less effective than a specialized warrior with mastery over a particular weapon and its advanced skills.
Also be aware that when spending you hard earned skill-points on many different gods, you will not have access to more powerful skills/abilities with one specific god.
Summed up: Each god represents a specific playstyle with specific weapons. But you do not need to only choose one god at all.
Additionally with New Game+ you can also master all gods, unlocking the full and true potential of your Viking or Shieldmaiden.

I hope the question won't be confusing because of my English :P
The skills are not bound to a specific weapon type, but a specific playstyle/god.
This means, when you want to fight with dual-wielded one-hand weapons (including hammers, axes and swords and any combination among those) you have to choose Loki. And at the same time, if you prefer weapon (once again included hammer, axe, sword) and shield you have to take the god Tyr.
So the god is not strictly bound to a specific weapon type.
So when it comes to skills, if you have chosen e.g. Loki, which means you can carry two one-hand weapons in each hand, and you would equip a two-handed weapon, you would have no skills available at all. This does not mean that you cannot fight at all, but you have no skills and probably make not much damage.
So each god/playstyle comes along with its own skills, you need to unlock, when leveling up.
Nevertheless, you can also choose more than one god, but with the disadvantage of not being able to maximize one god and therefore maximizing the damage with this specific one.
