2. Well, once you get a combat score high enough, randoms fleets of Marauders(the Bounty Hunter faction) will start coming after you.
If you're running solo in a heavy warship, then it'll be only ~three ships, but if you have a huge trade and warship fleet, it'll be a Large Marauder bounty mission chasing you(and possibly even multiples; I'm not sure if they actually launch multiple Bounty Hunter 'missions' at once, or if it's just that I usually build my fleet to be very mobile, and they just have difficulty catching up to me, and start 'accumulating').
3. As far as in-game, it's just sprites, and unfortunately, it seems like the 'standard' Marauder variant is the most common by far these days. If you want to sort-of-cheat, you can try peeking at your save file before you accept, to see if the Marauder mission has ships you want in them(and it also tells you what system you'll find them in, under the individual ship entries).
I'd say Engine variants are probably the most visually obvious(larger engine area of the ship, sometimes a third or even fourth visible thruster is added), and they're usually faster, though some merely spend the extra engine space on oversized steering thrusters(Marauder Splinter and the current Marauder Leviathan Engine variants come to mind).
Each variant does have consistent armaments, however, so if you're familiar with them, you can identify them by what they seem to be shooting at you.
